Mac and Cheese

List of Ingredients:

  • 10 ounces of elbow macaroni
  • 2 tablespoons unsalted butter, plus more for brushing pan
  • 2 tablespoons unbleached white flour
  • 2 1/2 cups of low-fat milk
  • 2 1/4 cups of grated extra-sharp cheddar cheese, divided
    1. Preheat oven to 400 degrees Fahrenheit
    2. Melt 2 tbsp butter in sauce pan over medium heat. Stir in flour and cook 1 minute. Add milk; cook 6 minutes or until thickened, stirring constantly.
    3. Remove from heat; stir in 1 1/2 cups cheeses. Season with salt and pepper. Pour over noodles and combine.
    4. Transfer to a 9x13-inch baking dish. Sprinkle with remaining 3/4 cup cheese.
    5. Bake 45 minutes or until top is crisp and beginning to brown. Let stand 10 minutes before serving.

    Brownies

    List of Ingredients:

  • 1⁄2 cup vegetable oil
  • 1 cup sugar
  • 1 teaspoon vanilla
  • 2 large eggs
  • 1⁄4 teaspoon baking powder
  • 1⁄3 cup cocoa powder
  • 1⁄4 teaspoon salt
  • 1⁄2 cup flour
    1. Preheat oven to 350°.
    2. Mix oil and sugar until well blended.
    3. Add eggs and vanilla; stir just until blended.
    4. Mix all dry ingredients in a separate bowl.
    5. Stir dry ingredients into the oil/sugar mixture.
    6. Pour into greased 9 x 9 square pan.
    7. Bake for 20 minutes or until sides just start to pull away from the pan.
    8. Cool completely before cutting.
    9. Note: I usually double the recipe and bake in a 9 x 13 pan. If you double the recipe, you will need to cook longer than 20 minutes.

    Granola

    List of Ingredients:

  • 3 cups oatmeal (Either Quick Oats or Old Fashioned, they both work well)
  • 1⁄3 cup coconut (may be omitted)
  • 1⁄2 cup vegetable oil
  • 3⁄4 cup brown sugar
  • 3 tablespoons honey
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla
  • 1⁄2 cup raisins (may be omitted)
    1. Pour oatmeal into a glass microwaveable dish and cook for two minutes; stirring once. (YES microwave the oats! I'm not sure why, but this is how I learned to do it in my 7th grade home ec class and it has worked for me every time).
    2. Combine all other ingredients into a bowl.
    3. Add in oatmeal.
    4. Stir until well blended.
    5. To finish, use either the microwave or oven. Both methods are listed below --
    6. Microwave method: Pour mixture into a glass dish and microwave on high for 4 minutes or until golden brown.
    7. Stir every minute.
    8. Cool on wax paper.
